Stuff - A Prosciutto Bonus with the Vino Rosso

ITALIAN WINE MERCHANTS...There's often an extra treat in store for
those who stop at Italian
Wine Merchants, 108 East 16th Street (owned by Mario
Batali, Joseph
Bastianich and Sergio
Esposito), for an informal Saturday afternoon tasting. To complement
a sprightly Orvieto or a lusty Amarone,
there may be rosy slices of salami, satiny prosciutto, peppery coppa
and other pork products cured, Italian style, by Dan Latham in the
kitchen behind the shop. Mr. Batali, whose father, Armandino, is a
salami maker in Seattle, oversees the production. The meats, made
from the pork of free-range Vermont pigs, include a delicious rolled
pancetta with cured fillet of pork in the center, and a sweetly tangy
sopressa salami. The meats are not sold, but they are served during
the weekly wine classes given by Mr. Esposito.
