About the Producer:
This tiny estate
began when two Swiss wine lovers followed their hearts to Italy.
Romy and Peter Weimer had already envisioned their grand Barolo,
their exemplary Barbera, and their experiments with powerful white
wines before buying the Cascina Ebreo in 1991. Seated in the Ravera
zone near the village of Barolo, the estate and its 2.1 hectares
of vineyards were in complete disrepair when the foreigners arrived
and plunged themselves into their new undertaking. Old vines that
had been ruined by neglect were torn up and new ones were planted,
and the house that had been standing on the site for two centuries
was repaired and augmented with the addition of a cellar. Their
dedication was finally rewarded in 1996 when they produced their
first vintage. Though still a well-kept secret for a lucky
few, Cascina Ebreo has presented the world with some splendid wines
that can compete with the best of their neighbors.
Nebbiolo covers more than half of this estate's vineyards and is,
as always, the sole grape used in Barolo as well as creating the
powerful, complex Torbido. It also makes up 10-15% of the Segreto,
a Barbera-dominated blend that is the best known of Cascina Ebreo's
wines. The remainder of the vineyards are dedicated to Sauvignon
Blanc and Semillon, which are destined to become the impressive
white wines of which Peter Weimer dreamt in his youth. The estate
adheres to traditional methods of vinification, shunning any filtration
and aging their wines for at least two years in oak (at least one
year for the white wines) and for another full year in the bottle
before release.
